We would like to present a few interesting recipes from the kitchen of gourmet chef Anton Lanz:
White Asparagus with Salmon
serves 4 people:
600g asparagus
16 slices of wild smoked salmon
field salad
creamed horseradish
dill-oil
sherry-vinegar
lemon
pepper
salt
olive oil
Peel the asparagus and cut into 6cm long pieces. In salty water cook the asparagus until tender before rinsing it under cold water. While warm marinate the asparagus in a mix of dill oil, sherry vinegar, salt and fresh pepper. Wash field salad and toss in a dressing of olive oil, salt and lemon juice. Put asparagus on serving plate, arrange field sald in centre of plate and arrange rolled-up smoked salmon around. Garnish with the horseradish.
